You'll feel like you've been snuggling in a warm quilt grandma made, when you eat this menu.

The Loose-meat sandwiches are yummy, as well as filling! A great way to "sneak" veggies into those veggie haters in your home. I cook the cabbage in the meat till it becomes unrecognizable for the veggie haters I cook for, and they are none the wiser.

Carrots Supreme are so YUMMY! Who could ask for anything more comforting on a cold fall evening? The maple syrup gives the carrots a sweet potato taste. Sweet and yummy. Again those veggie haters may just have a change of mind with one bite of these yummy veggies.

And you couldn't ask for a brighter dessert then Hawaiian Upside-Down Coffeecake. It will bring sunshine to your table every time.

How Bout Those Cowboys?- 


This is one for the men in your life. I have yet to meet a man or boy who doesn't love chicken fried steak.

The first time we had this, my husband actually made it for us, as I was very sick. We had it several times that month! He couldn't get enough.

 All I can say is Thank You, Thank You, Thank You, JoAnna. If it wasn't for this recipe my husband would still be eating up every greasy chicken fried steak he could find across this land we live in. He used to eat them at gas stations, greasy spoons, and fast food places across America. Any where there was a chicken fried steak he would order it! This has replaced all those unhealthy chicken fried steaks forever.

Put this on the table with a few other fixin's, such as Sweet and Sour Cabbage, Dilled Cucumbers and Impossible Pumpkin Pie, and you have a meal fit for the Cowboy and Little Cowpokes in your life!

Another Tribute to the Great American Cafeteria!-


I grew up in cafeterias. I went with my parents, both maternal, and paternal grandparents, both maternal and paternal step grandparents even, my aunts, uncles, cousins, friends, associates, and every one. The high light of every Sunday was, the whole family, and all our friends always meeting at the local cafeteria. And they served every ones favorite comfort foods. Furr's Cafeteria was my family's choice, and this was often on the menu there. A meal I thought I would never have again after being diagnosed with diabetes, but JoAnna made possible, by redoing comfort foods, healthy style!

Salisbury Steak with mushrooms was a staple on the Cafeteria menu. Oh so beefy and yummy.

Carrots Supreme, beautiful bright orange, and sweet as dessert, it's hard to believe you're actually eating vegetables! It's my mother in law and son's favorite side dish at the Cafeteria.

Dilled Cucumbers, they are low calorie, high in water, and just down right refreshing. My husband and I just love them. My step father and grandmother always ordered them at the Cafeteria.

Dessert's A Little Bit of Heaven, started being served when I was a teenager at our local Cafeteria I was in love at first bite. They don't put it on the menu often, but when they do, I just love it. But, now I can eat it any time I want. Not only can I make it myself, but healthy too!

Welcome Fall, Y'all!- 


I know fall has arrived when I put this on the menu. There's no better menu in my mind to welcome fall, and to make that first fresh apple pie of the season. In my opinion this is the best apple pie, I've ever eaten.

But, before we get ahead of ourselves with dessert. My family, and families across the midwest love a good loose meat sandwich. Give JO's Crunchy Loose Meat Sandwiches a try, you will never want the stuff from a can again! Your family will be enjoying a a favorite family friendly main dish, that's also healthy.  And with the addition of the cabbage is filling too!

Add a bright and colorful side of Old-Fashioned Sweet-Sour Red Cabbage to your plate and your meal will be as colorful on the plate as the trees are outside in autumn.

Casserole Surprise- 


I think every family loves a good casserole. This will recall lovely family meals, when casseroles were on the menu. This is a great dish to get fish into your family's meals, but with the yummy comfort of a casserole. Kids and families just love noodles and creamy sauces!

Steamed broccoli will be a low calorie side dish, that will add some color to your meal.

Finish with tummy warming and FILLING pumpkin bread pudding. My kids cheer for this dessert! All the yumminess of pumpkin pie, with the comfort of bread pudding. And it's such a huge serving you'll be satisfied and stuffed by the end of this meal!

If you love Cafeterias, and just crave a cafeteria fix every once in a while, but don't want the Cafeteria calories, or fat. Don't get the Cafeteria Blues, try this menu!

As has been said it's not a cafeteria with out Salisbury Steak. So it's a must have on a Cafeteria menu.

Fabulous Green beans will help fill your tummy with nutritious low calorie vegetables.

And Millionaire Pie was my families favorite Cafeteria Dessert. My grandmother and Aunt would always have us order one for any family gatherings. It wasn't a family gathering if we didn't order our Millionaire Pie! JO's Million Dollar version does not disappoint. It's one dessert I truly hated to give up as a diabetic. But, no more! I can have my pie and eat it too! It's oh so creamy, the cream cheese and nuts make it sooo rich, and the fruit gives it just the right sweetness. It's perfect.

Cozy Autumn Supper-

This menu is for those cool autumn evenings when you just want to have something cozy and yummy. This is one of the coziest menu's I've developed so far!

Cozy Autumn Mac and Cheese, taste just how it sounds, cozy with the distinct autumn flavor of that interesting spice nutmeg. The longer you let it set and the flavors meld the better the flavor develops.

Roasted Spaghetti Squash is for sure one of my families favorite autumn squashes that we always look forward to. Nothing says comfort like spaghetti to my family!

Collard Greens, are one of my children's and husbands favorite vegetable a comfort meal just isn't complete with out them in my house. In my house most often we used a can of seasoned collard greens that every one loves and is very low calorie.


Last but certainly not least this Creamy Pumpkin Cheesecake inspired by JoAnna's Angie's Creamy Cheesecake and Olive Garden's seasonal pumpkin cheesecake hits that Cozy Autumn pumpkin pie craving, but is in a oh so sophisticated way!
